It's my understanding that the entire apple, collectively is healthy. With the exception of the seeds and stem, of course. It's also my understanding that most of the fiber and nutrients are in the skin, which is one of the reasons why I laugh at the McDonald's "healthy" Happy Meal option of the apples, as they are skinless.
When we have apples in the house, I wash a couple in the morning (if I don't have time to do the whole bag) to have ready to grab during the day if I need a snack, or think I'll need/want a snack while I'm sitting nursing my daughter.
As far as I know, it's the same with other produce as well, such as pears, kiwi, potatoes (once the potatoes get to McDonald's, though, there is nothing healthy left), etc.
The skin has the most vitamin. The pulp has the most fiber.
skin has vitamin C while the inside has fiber.
Just underneath the skin, which means it is not a good idea to peel an apple.
