Is this stuff god for you?!


Question: I tried this new salad and its called Tabouleh, its heaven on earth and i could eat it all day, but is it healthy? (since I'm dieting)
it has:
2 bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)
2 tablespoons of fresh mint, chopped
I medium onion, finely chopped
6 medium tomatoes, diced
1 tablespoon salt
1/2 teaspoon black pepper
1/2 cup bulghur, medium grade
6 tablespoons lemon juice
6 tablespoons extra virgin olive oil

Preparation: (not sure if this is needed)
Soak bulghur in water for 1 1/2 to 2 hours in cold water until soft.
Squeeze out excess water from bulghur using hands or paper towel.
Combine all ingredients, except for salt, pepper, lemon juice, and olive oil.

Tabbouleh is great for you, as a vegetarian, I make it all the time. You can cut back on the olive oil to make it a little less fattening. It is also great in pita pockets with a chopped up hard boiled egg and a little hummus.

that sounds healthy and yummy! and omg.. that looks good!

Just so you know, if you are dieting to cut calories... extra virgin olive oil has like 500 calories per table spoon or something. People think its really safe and healthy but it packs alot of calories.

But other than that, that sould good and healthy to eat.

i can only make an uneducated guess, but yes i think it would be reasonably good for you. we surely know all of the vegetables are good for you. i do not know the caloric content of the bulhur wheat or even the fat content which surely is low. i haven't had it in years but i have had that exact same recipe before and you are right it is out of this world. i ate it as a child and was crazy about it. i will be interested to see if anyone is sure about the nutritional information on this dishy dish. but my bet is that it is reasonably good for you.
