In the Torah, Jews are commanded to not eat certain foods. These "unclean" animals are all scavengers who will eat from dead carcasses which could carry disease such as trychinosis. In biblical times there was no way of knowing what food could carry disease. The biblical instruction regarding fish is that only fish with fins and scales could be eaten. This is why shellfish and catfish are not kosher.

in leviticus chapter 11, some instructions what to eat and what not to eat (i stopped with the fish; it goes on a long ways after that so be warned, these are not ALL the rules! i didn't want to spam.)

god aside, the reasoning behind not eating the forbidden things is that they carry transmittable disease, not that they indirectly cause (for example) heart disease. trichanosis even today can be gotten from eating pork and shellfish if it is not properly stored and prepared. in the days before refrigeration, they were dangerous indeed; people died.

but no, the fat in shellfish is low in cholesterol. problem is, we tend to dip our lobster tail in butter, don't we? we bread and deep-fry our fish. THAT is not heart-healthy.
