I've been through the whole weight-gain thing, while I was recovering from anorexia. Here are some good foods to try:
Smoothies/Milkshakes--packed with healthy calories in small servings.
Ice cream--good for the same reason, and great in the summer!
Use the regular ground beef, unless you eat a lot of ground beef (like every day)
Nuts! Protein, healthy fat, and calories--a great snack.
Keep eating your fruits and veggies, but make sure you get your protein and carbs. It will be hard to gain weight eating a lot of bananas, because they just don't have very many calories. But if you incorporate them into smoothies, etc. (or eat them with regular, not lite, yogurt for a snack), then they're good. Potatoes are also a good source of carbs--those are an important foundation for your diet, so don't avoid those. You're far from "fat," so don't worry about that.

A good thing to keep in mind is to make every bite/drink count. I know that's been important for me, since I don't really like to eat. Drink milk (2 percent or whole), juice, gatorade to stay hydrated. All of those will have healthy calories. Obviously, soda has calories too, but it's not as healthy. Cheese and peanut butter are more good foods to keep in mind too. Obviously, cheese comes in a lot of forms :). Eat it any way you like it--it's a good source of protein and a healthy source of calories.

Exercise: avoid a lot of cardio, since that will burn calories that you need to gain weight. Focus on light weights, like weight machines, that will help you stay toned as you gain your weight. Also, exercises like pilates and yoga are good for keeping you flexible. While I was gaining weight, I was instructed not to do more than 30 min of cardio daily.

How long it will take: be patient--it takes time to lose weight, and the same goes for gaining it. It varies for every person, obviously--I wouldn't expect to gain more than 3 pounds a week.

Pant sizes: at my lowest weight, I was 104 (I'm 5'7"). I wore a 0. Now, I'm about 115 and wear a 4. At one point, I managed to get up to 120, and I was a 4 then too. So maybe that will give you an idea of where you'll be.
