It is nearly impossible to build muscle without gaining some fat. What works best is to work first on a bulking phase where you focus most on gaining mass and strength. Set a target weight. Then you can switch to the cutting phase after. Don't waffle between the two or you won't get the results you want.

While bulking you will need to take in more calories (approx 500) than your body burns in a normal day. You will need to eat "clean" throughout bulking and cutting. The main difference will be caloric intake and how many carbs you ingest. During bulking you will need more carbs (focusing on getting most of your nonfruit/veggie carbs right after your workout). During cutting you will probably want to eliminate all carbs except for nonfruit/veggie carbs.
