Is it healthy to fry with extra virgin olive oil?!

Question: Is it healthy to fry with extra virgin olive oil!?
My Spanish partner says theres nothing unhealthy about frying or cooking with extra virgin olive oil!. I know in its crude uncooked form its healthy, but Im not so sure about frying with it coz I thought the chemicals change and make it unhealthy!. Obviously in Spain alot we eat is swimming in oil, so Im a bit alarmed whether it really is that good for me or not!? ThanxWww@Answer-Health@Com

It's a myth!.

All oils will oxidize (turn rancid) if repeatedly heated, such as with oil that is used in a deep fryer!. "Repeatedly" is the key word here, since heating them once will not be enough to cause significant oxidation!.

Monounsaturated oils are actually quite stable when heated to high temperatures, and olive oil is one of the most stable of these monounsaturated fats!. What you DO lose when you heat olive oil is some of the delicate flavor and scent of the raw, unheated oil, since the volatile compounds in extra-virgin olive oil that produces these characteristics cook off quickly under heat!.

In terms of heat producing trans fats, heating will cause some hydrogenation of olive oil (and all oils for that matter), but the amount is miniscule!.

Best of luck!Www@Answer-Health@Com

I was told that when heated olive oil doesn't get hot enough to give fried food a crispy coating meaning that the food will absorb the oil!.

I also heard that frying destroys all the good things in the oil too!.

Maybe just dress salads with the oil to get the benefits!?Www@Answer-Health@Com
