Would I put weight back on?
If I went on a 2 weeks diet of just fresh fruit and vegies with lean meats every now and then and 30 mins exercise 4 times a week and lost say 5 pounds and the first morning of the third week I woke up and ate a KFC chicken twister MMMM which has about 600 calories and a pizza with 1200 calories but my BMR was at 3000 and I did 30 minutes of exercise would I put on weight? would my metabolism be too low to eat like that?

Yes, when your bodys in that semi starvation mode like when you are dieting it will suck up calories like crazy.
