Olive oil has a high resistance to structural change at higher temperatures because it is a monounsaturated fat!. It is high in omega 3, 6, and 9 fatty acids!.

Saturated fats are the most stable of the fats and Coconut Oil is a very good oil to cook with!. DO NOT USE VEGETABLE OILS at all in any form!. They are very unstable due to their double bonds that break apart easily and polymerize into trans fats when heated even slightly, subjected to sun light or even fluorescent lights in stores, and your body temperature causes them to polymerize into these dangerous fat configurations where the "sis" configuration turns to the "trans" configuration!. They actually go rancid (oxidize) in your body to create inflammation!. Don't listen to the very stupid so called "food experts" that are nothing more than "hired guns" of the food industry that are tying to sell you the HIGH profit oils like soybean, canola, cottonseed, and corn oils that are these polyunsaturated monsters that are so damaging to the body!. All these polyunsaturated oils are now genetically modified to make them cheaper and manufacturers more money, not better health!.

Butter is another very good fat to cook with, but in all cases, it's good to keep the heat as low as possible to maintain the integrity of the structure of the fats!.

Butter and coconut oils are the only fats that do not require bile to break them down in your body, so they provide very good sustained energy and the coconut oil provides about 50% lauric acid that is very beneficial to your thyroid gland and the butter provides butyric acid to nourish your large intestine cells, the same way probiotics do!.

they say evoo, but my health-conscious friend said "cold-pressed" oil is best!.

"Cold pressed oil is oil which has been produced with the use of a low heat technique!. The introduction of heat to the process of making oil will degrade the flavor, nutritional value, and color of the oil!. Heat, however, increases the yield!. In terms of nutrients Safflower Oil (not sunflower oil!.) It is one of the few oils that contains a significant amount of Omega 3- fatty acids in addition to the Omega 6's which nearly all oils contain!. Still - use sparingly as there are more efficient ways to attain Omega 3's (primarily fish) or if you want to avoid the mercury in fish take a fish oil supplement two to three times per day with food!.
