Boiling bones to make stock. Is there protein in it?

Suppose I boil bones to make a stock for soup. Would there be protein in the stock & if yes, do you know how much?


Answers:

The boiling process actually breaks down the protein strands. This doesn't completely get rid of the protein (it will reform as gelatin when cooled), but...

If you're looking to have something high in protein, add something with protein at the end of cooking (such as throwing in some chunks of meat). There will never be enough in the soup to make it worthwhile, from a nutrition standpoint.
