The first thing that stuck out to me: If you eat fish (ie Tuna) are you not a vegetarian!. The correct term for that diet is called "Pescetarian", which means the only meat products you eat are fish!.

Seitan is a wonderful substitute for any meat!. It cooks almost exactly like meat!.

Try eating more protein!. Quinoa (pronounced Keen-Wah) is sort of like oatmeal, but has a high protein content!. Mix that with blueberries or other fruits in your breakfast!.

For other meals, try using the seitan in cooking mixed with a variety of vegetables!. Tofu is good, and you can marinate it to your tastes!. Beans are a good filler, also!.

I'm not sure of your location, but where I live, there are these sandwiches called "Sant's", which are vegetarian sandwiches, but come in varieties like tofu-salad (sort of like tuna salad), vegetarian Bologna, vegetarian cheeseburger, seitan cutlet, hummus and olives, and so on!.

For greens, stick with spinach in your salads instead of iceberg lettuce!. If you're at a salad bar, add chick peas, and beans if they're available, as well as a small serving of nuts for fat content!.

Do not rely just on the foods you mentioned!. Potatoes, although they do have some calories, do not provide much nutrition!. The same with cucumbers, as they're mostly water!.

I hope this helped!.Www@Answer-Health@Com

Eat more fiber rich foods, beans, whole grains, etc!. A very filling and satisfying dish is a vegetarian red beans and rice:

2 C red beans (if you use dried beans, soak overnight)
6 C water or vegetable stock
2 bay leaves
3 T olive oil
1 large onion, diced
2 stalks celery, diced
4 - 6 cloves garlic
4 soaked sun dried tomatoes
2 roasted red bell pepper
1/4 tsp!. cayenne
salt, pepper and hot sauce (preferably Tabasco) to taste
2 C uncooked rice

Place soaked beans in a large Dutch Oven with water and bay leaves and bring to a boil!. Lower heat and continue to cook, uncovered!.

Meanwhile, heat oil in a large skillet and saute
