Question:

Is my diet healthy? Or causing me to gain?

All I eat now a days is special k w/ red berries, Nature valley granola (oats and honey) bars, fruit, and an occasional chicken salad or Pb&J on whole wheat. It seems to me I'm taking in a LOT of carbs.

The funny thing is though, when I start watching my weight I GAIN weight, like I can eat nothing but junk food an I lose weight.

I was just wondering if anybody could tell me how healthy my diet is? And if it isn't give me some tips on the BEST things I can eat?

It's good that you are not eating junk food but you are right that you are still taking in a lot of carbs and a lot of sugar as well. Cereal, granola, and PB &J are all loaded with sugar. Sugar in those foods are no better than sugar you find in junk foods.
Instead you should try putting more protein in your diet. For example, try having 3 egg whites and a piece of low carb toast with PB for breakfast and an orange. Try Arnold's low carb bread. I think it's the best.
For lunch have a salad with whatever veggies you like and add a can of tuna or some red beans for added protein. Try a light dressing or none at all.
For dinner you have many options. If you don't have a lot of time, I suggest omega-3 pasta. Barilla makes some good ones. That way you get some great nutrients in a quick and cheap meal. If you have more time, try grilled chicken with steamed vegetables.
