Healthy recipes for teen requested...?

I need quick easy meal recipes for family that are low in calories, carbs,fat or sodium.
My teenage son has been working at a camp in North Carolina for the past couple of months. He has gone from sitting around on the computer to being outside and working. He has lost a bit of weight and is so thrilled. I want to change the entire eating habits of this family. I am looking for recipes that are cheap, easy, quick..but most importantly, healthy and will help him continue with weight loss. I also hope to help him continue to lead a more active lifestyle. All your suggestions and recipes are appreciated. Vegetarian a plus.

Get a subscription to Cooking Light, the magazine. Or visit their website, which has a searchable index of recipes for free.

With the exception of some of the desserts (which for a sugar addict like me are just bad news, no matter what), the recipes are very healthy, easy-to-prepare and tasty. They also have a nice monthly set of recipes that can be prepared in less than 20 minutes, which is useful if you are strapped for time.

Cooking Light also puts out a yearly hard-bound collection of all of their magazine recipes from the previous year. You can pick this up at your local bookstore, or order very inexpensive used (and even new) copies on Amazon.com. The 2007 book is less than $12 on Amazon used.

The nice thing about the collected recipes is you can actually buy sets of recipes from previous years, and get away from keeping all of the magazines around.

I maintain a fairly strict bodybuilding diet most of the year, and the Cooking Light recipes (with some minor modifications) keep me from falling prey to the boiled chicken, rice and tuna fish trap that bodybuilders who don't know how to cook always seem to fall into. The variety of my diet one of the things that I credit with being able to maintain pretty good eating habits (and body composition) year-round.
