Answers:
Protein : It provides the building blocks for tissue, hormones, enzymes and accounts for 15% of the body, It helps repair the damage that has been done to our muscles during the day :D
Protein in high quantities repairs your muscle quickly and also fastens your metabolism, which means more fat is being burnt during the day, providing that you are not feasting on junk foods and High Gi foods!.

Carbohydrates: Really the difference in carbs is High & Low Gi!.
The Higher the GI the quicker the energy is burnt up and you will hit a low fast, which isn't what you want cause this is also the type of Food that will make you gain fat !
Some examples of High Gi Foods:

Sugars (from high to low: Maltose, Glucose, Sucrose)
Honey
Puffed cereals (white rice, wheat, corn, rice cakes)
Potatoes ( regular russet, instant, mashed)
Candy
Breads (especially white bread)Instant products ( instant: rice, oatmeal, wheat, grits)
Carrots, corn, peas
Flaked cereals (corn flakes, etc!.)
Corn chips

Some examples of Low Gi foods (this is what you want to eat, because the energy is slowly released ):
Brown rice, 100% Whole Wheat Bread, Oats, Pasta, Spaghetti, Beans, Veggies, etc!.!.
