idk about the medium rare part of the question but depending on the meat CAN make a difference in its calorie content with a cook effect.
for example: when you buy ground beef at the store and then cook it in a pan you eventually drain a bunch of grease out right? all that grease is fat. the longer you cook the meat, the more grease (fat) you get out. and as you probably know, fat contains a lot of calories (1 gram = 9 cals).
