Is this stupid? & what nutrients am i missing??!

Question: Is this stupid!? & what nutrients am i missing!?!?
i'm only eating salads & omletes!. odd combo, i know, but they are easy to make & really cheap (busy single mom)!.
i put carrots/ green peppers in the salads, and i figure i'm getting protein from the eggs, and put a little cheese in them with some veggies!.
what nutrients am a missing, and what foods can i eat (cheap, don't take much prep time) to get them!?
i'm also trying to lose weight!. it seems to be working - i've lost 2 1/2 pounds since sunday!. i know that could just be false weight loss, but hey, anything helps i guess!.

thoughts!?
suggestions!?!?

thank you!.!.!.!.!.!.!.!.!.!.!.!.!.Www@Answer-Health@Com

Answers:
Yes, by eating only these two things, your body is missing out on essential nutrients!. Ideally, you should have a balanced diet that includes whole grains, lean protein sources, low-fat dairy, fruits and veggies, and healthy fats!. Here is a list of ideas for healthy, balanced meals and snacks:

breakfasts

-whole grain cereals (Special K, Cheerios, etc)
-fruits (apples, berries, bananas, melon)
-eggs
-toast (make it whole grain: you can add a tbsp of pb or margarine)
-yogurt

Lunches/Dinners

-canned tuna (add egg, celery, and a bit of mayo if you wish)
-chicken/cheese quesadillas
-canned soup (Look for low sodium)
-grilled chicken breast
-baked potatoes
-veggies (raw or steamed)
-chicken salad (easy of the dressing)
-homemade pizza topped with veggies
-bean roll-ups

Snacks

-cottage cheese
-whole grain crackers
-string cheese
-fruits
-granola bars
-fat free Jello/pudding
-lightly salted nuts

This looks pretty good!. The only thing I would add to your salad would be fresh baby spinach also add a few fresh walnuts and a few grapes or other fresh fruits!. For your omelets, if you are making 2 eggs, leave out the yolk of one egg to cut some fat and retain protein!. A vitamin B supplement would also be good for you!.
You need some fruit, grapes are easy, and walnuts would give you some essential fats and trace minerals!.
Be sure to drink eight 8oz!. glasses of water every day!.Www@Answer-Health@Com
