But you need to consider the NET effect, do you not? Additional farmers and food processors would be needed for veggie food production, and it's questionable if it wouldn't simply offset the jobs lost. But entire industries would be lost (deep sea fishing, sausage production, etc).
The idea that meat eating could be completely eliminated is absurd, of course. Think of the US experience with Prohibition. It would be far too easy to skirt such a ban. Venison, anyone?
