Question: How many eggs should I be eating a day on a low carb diet if that's all I can afford?
I think I should be eating a minimum of 8 eggs a day... if I am eating almost nothing else...

A large egg is 71 calories, 8 of them would be 568 calories - that's not nearly enough calories.

Make egg salad with lots of mayo. Add eggs to ground flax seed for needed fiber & fats. Make an omelet use bacon grease or chicken fat, add a lil bacon, onion & cheese - drizzle pan grease over the omelet.

Walmart & many grocery stores have 10# of chicken leg quarters for less than $5. Eggs are actually a better bargain because there is no waste, but chicken leg are almost worth it for the bones & fat alone. Cook up the chicken, freeze the pan drippings after the fat separates - save the fat for cooking grease & the juice for soup. Make bone stock with the bones, keep & freeze them for the next batch, bones can be used several times. Add vinegar to the water to leach minerals from the bones. Make chicken soup, chicken salad serve over shredded cabbage w/mayo and chicken cacciatore serve over fried cabbage.

Buy mayo in gallon jugs & save half the cost. Cabbage is usually the cheapest most versatile veg. I buy store brand processed cheese which is about half the cost of reg. cheese. I would get bacon ends & pieces - use it for seasoning more than anything. A tiny bit add to an omelet makes a huge difference in taste.

Buy tomato paste, canned spinach & canned greens (collard, mustard, turnip)

You might want to buy bags of dried lentils, kidney beans, pinto beans or any beans & sprout them. This turns them into vegetation with very low carb count. Bean (other than mung & adzuki) sprouts need to be cooked & shouldn't be eaten raw but can be added to soup or stir fried. Garbanzo/chick peas, lentils, peas can be eaten raw or cooked though. The grocery store beans are usually cheap & will make a great quantity of sprouts in a few days.

Ground flax seed (4 Tbsp) 1/4 cup water, artificial sweetener, mix in a raw egg - let sit 10 min. to absorb liquid, put cream cheese in the middle & nuke 2 min. for daily fiber needs.

id advised having 2-3 eggs a day
plus egg whites 4-10 seperately

i can buy egg whites in the cartoon...

u can also buy canned tuna,....
