Im the same as you and I dont gain weight no matter how much i eat. What i do is some weight gain exercises. Do squats and leg lifts etc (Just google weight gain exercises for a proper list as i dont know the proper names of each excerise lol) But doing some of them often, will build your muscle mass and this gains you weight.
I am also a vegetarian. What I find helpful in gaining weight is eating lots of fruit to get the natural sugars. Also, you could gain weight in muscles. If you work out a lot, you can eat a lot of food, and gain the weight in muscle.
You dont need meat to maintain weight. Eat things high in protein such as legumes, nuts, and almonds. If you dont consider fish meat, tuna could be the best thing to help you gain weight.
