Question: Is frying food always unhealthy?
If you fry, say, Mushrooms with extra virgin olive oil. Unhealthy?

Answers:

There is olive oil and then there is olive oil and then again there is olive oil.

DO NOT use extra virgin olive oil when you’re going to heat it. Use it for your salads (making vinaigrette). It is the tastiest olive oil but degrades at high temperature (don’t your mushrooms have some kind of weird taste?).
If you’ll reach a temperature above 375F, you have to use EXTRA LIGHT olive oil (“extra light” because it’s lighter in color but contains the same amount of calories), which was refined and can withstand higher cooking temperatures but has less flavor (don’t use extra light olive oil in your vinaigrette or your sauce will be "blah" and boring and you'll have to compensate with herbs).
Avoid the 100% pure olive oil which is the lowest quality because it’s not “virgin”.

It’s a little confusing but if you put the 2 bottles next to each other (extra virgin and extra light), the darker one is for salads, the lighter one is for cooking. I use a big marker and write “salad” on one and “cooking” on the other.

Olive oil IS very healthy. It’s rich in monounsaturated fats (oleic acid) which raise the good HDL cholesterol and lower the bad LDL cholesterol in the blood so it’s very good for the heart and your organs’ health. I use it for all my salads dressings. 1 tbsp. (for a woman) or 2 tbsp. (for a man) will give you daily great benefits, just be aware that olive oil is good but it is still 120 calories per tbsp.

Crisco ads say that they have extra virgin olive oil for dressings and sauces, pure olive oil for grilling/sautéing and marinades and light olive oil for roasting, baking and frying. So I guess you could use pure olive oil to sauté your mushrooms but I use the extra light one as I don’t want to have to deal with 3 kinds of olive oil.

I use canola oil for deep frying. I make French fries which are healthy, low calorie (blot, blot, blot, a pinch of salt), tasty (using fresh potatoes, never frozen/defrosted), when I get a craving for it. My fryer is a pain to clean so it’s a deterrent to frying and I don’t get cravings for super salty greasy restaurant French fries as mine taste better.



Deep frying method uses hot oil and that is very destructive for nutrients and it also adds calories to the food that is cooked. Especially destructive this method for the vitamin E.

Studies have shown that cooking food in fats and oils destroys between 70% and 90% of vitamin E.


Frying causes great distractions of vitamin A in margarine. After 5 minutes of frying margarine losses 40% of vitamin A and 70% lost in 15 minutes.

plus oliveoil is one of the best oils for you, just not too much of it.



It depends on the type of oil you use and how much, you can also fry with butter, fat, etc. It really depends.
