Question: In the last week I've reached to do 1000-1200 crunches per work out, my question is:?
Should I do them daily or once in 2 days (3 times per week), letting the muscles rest?

Answers:

Over training can be worse than not training. If you are trying to get a six or eight pack it doesn't matter how many sit ups or crunches you can do if you don't eat right and get enough cardiovascular exercise.

That many crunches is detrimental to building your abs and will very like cause you to have lower back problems. Instead of doing that many, limit the amount of crunches you do to 3 sets of no more than 50 per set. If you want to make the crunches tougher, use a decline bench and hold weight plates on your chest. Target your entire abs by doing exercises like leg raises that target the lower abs and obliques that target the sides of the abs. Add in some lower back extensions. Do an ab workout no more than every other day. Twice a week is actually best. Muscles grow through rest.

Do them 2wice a week. Add weigh to your crunches. You went wayyyyy to far with that one.
Do you do lower back work too...?? if not, there is a good chance you have developed a muscle imbalance. Start stretching exercises for your abs and incorporate some back extensions and inverted planks to get your back up to mark with abs, it antagonist.
Your spine is not properly supported, since it has very strong muscle (your abs) on one side and very weak(your lower back) on other. You'll look hunched if you don't strengthen your back which I hope you are already doing.
