I love pickels and really acidic foods and someone just told me that that can really damage my enamel.

The acid in soda, juices, etc. can wear down the enamel.
No it won't grow back.
Acid will stay in your mouth for 20 minutes after a high sugar attack. That's why those who snack all day have poorer enamel then those who snack once a day.
Your best defense is Flouride. Acid will soften the teeth. Flouride will strengthen them. If you eat/drink a lot of acidic foods or drinks make sure you rinse your mouth out with water. Then brush your teeth. Try over-the-counter flouride rinses like ACT rinse. You can get Rx rinses from your dentist if you are really worried.
