I would suspect you might have enlarged adenoids. That is one of the main causes of being a "mouth-breather" when sleeping. My daughter had hers removed and it cured her of sleeping with her mouth open. You should see your doctor to rule out this or other medical conditions.
I tended to sleep with mouth open when I had my braces -- I couldn't tightly close my mouth anymore so I inevitably I'd be breathing through my mouth. Once they came off it took a conscious effort to start breathing out of my nose again and I recall using pillows or elastic bandages to help keep my jaw closed during sleep. My sister has a similar problem but it's due in part to having congestion due to allergies and slightly oversized teeth. She can't do much about the teeth as she discussed it with a professional but she's trying those breathe right strips to open nasal passages and I also advised her to try a Neddy Pot to flush out her sinuses.
