It is true that the bars with the plastic balls are better becuase they don't chip teeth?
Also, is it better to get a smaller size?

they all have the potential to chip your teeth. as far as a smaller size, are you talking about bar gauge or ball size? either way, its all about being careful. don't be over zealous when you eat and always chew carefully. it takes some getting used to and with practice you will barely bite it. i've had mine awhile now and never chipped a tooth on it.
