The real name is a gag. But is commonly called a mouth prop.
A Mouth Prop is the rubber plug shaped device that props your jaw open when having a tooth extracted for example if your jaw is getting tired. A Rubber Dam is a device that holds your full mouth open for Ortho work or long treatments to ensure the area is kept dry at all times.
