Saliva has enzymes in it that start the digestion process. It especially contains a lot of amylase, which helps break down complex sugars (carbohydrates) into simple sugars, so the body can use it as energy.

Saliva also helps moisten food so it is easier to shape it into what's called a bolus, which is then easier to swallow.

Saliva can also decrease the pH of the mouth environment, which helps protect it against certain bacteria.

Saliva does two things:It softens the food we eat and allows us to form small pieces on the back of our tongue which can then be swallowed. In order to use the food inside our body, we have to absorb it into our blood. This requires that we break the food up in to individual pieces so that we can not see the food , saliva helps to break up the food
