I was eating dinner when I noticed my tooth overlapped another tooth and I hadn't felt that before.

Yes, unfortunately, teeth shift constantly.
I wore braces so I know for a fact that teeth don't move that rapidly. If they did, you would notice the pain from the sudden shift. You probably got some food caught and it brought the overlapped tooth to your attention.
