By the time a normal person(under normal circumstances) goes to sleep the body won't have quite done processing food and liquid. The process completes overnight, the remainders drain to the bladder and kidneys and hence the thirst and need to go.
It's healthy to drink about half a litre early on in the day, close to when you wake up.
