The color is due mainly to bile made in the liver and secreted through the gall bladder and bile ducts. Bile breaks down fats and makes them easier to be absorbed in the blood stream. The more bile, the darker the excrement. Some food can affect color, spinach can darken it green, Oreos can make it darker. But these are exceptions. Lighter color means your not making enough, most the time that is not a concern. Baby's have strange colors because their bodies are not fully developed, so there is little bile. Without the bile the color is basically the color of what they eat. (Ask any mother, it can be really gross)
