How long ago did you quit smoking? If only recently, it's almost a way for your body to clean itself out. For however long you were smoking, you had nicotine and whatever other junk is in cigarettes lining your nasal passages. They became like a barrier to other impurities.
If you only stopped recently, your nose has to get used to "harsher" (or actually normal) conditions. You don't have that barrier any more, so your nose becomes irritated quicker.
If it has been over a week or two, and it is still bloody, i would check with your doctor. It could be something else, and just is a coincidence that it happened just when you stopped smoking.

I don't know where you are, but it is winter in the northern hemisphere and the humidity is very low.
When I lived in the southwest desert, I had nosebleeds all the time during winter, until I got a humidifier.

Your nasal passages are too dry. This causes small blood vessels to break.

Use saline nasal spray 2 or more times/day. Moisturize the inside of your nostrils. It will also protect you from cold & viruses.
You can also use a humidifier in your house.
