1. The rinseing of your mouth should continue for at least 2 weeks. Longer if the piercing still feels like it gets "dirty" throughout the day. Cleaning the outside needs to continue for 6 weeks or more (you can cut down to once or twice a day after 3 weeks or so). The reason the outside has to be cleaned longer is that the inside of your mouth is a quicker healer than the outside.

Even after you are healed you will need to keep up oral hygine and wash the piercing in the shower daily. Piercings need daily upkeep for life, but they're much easier to handle once they heal.

2. You are being instructed to rinse after dairy to avoid bacterial and yeast infections. Once your piercing is healed, it will be able to defend itself against these critters without a mouthwash rinse afterwards. Keep cleaning with mouthwash while you're using it after meals. Once the inside of your piercing seems to be healed, just rinsing with water will be fine if you need anything at all.

3. Yes it can hurt your piercing to use mouthwash with alcohol. The alcohol can damage cells that are trying to heal your piercing. As another downside the alcohol can "burn" your mouth after a few days use. This condition is uncomfortable and really does feel like you've burned yourself on hot food. Your mouth can become irritated and sore as a result. If you dilute an alcohol mouthwash 50/50 with water, it will be better for you. Ideally you should use an alcohol-free mouthwash like Biotene or a saline solution.
