Simply put, it is digested remain of what is consumed, bacteria and other microorganisms and their metabolites, bile or dead blood cells and other physiological waste products all coated in mucus.

i think some of the color is supposed to come from old bile and bilirubin left over in the body from old red blood cells.

poo (or more scientifically faeces) is not always composed of the same matter, this being the case as many factors effect the viscosity and the composition of it; namely, humidity, air pressure, height above sea level and the food you are/ had eaten. The food you have eaten primarily effects the faeces, which too much fibre causes constipation and other nutritional aspects: carbs, fats etc... also affect the outcome (literally). So there is no real answer to saying what poo consists of as it varies quite a lot.
