Low temperatures make bacteria hibernate!. No bacteria =no rotting!.
High temperatures cook food, thus killing bacteria, but it must then be eaten!. Unless you chill it really fast then keep it cool!.
Dehydration - I'm not sure!. Bacteria need warmth, moisture, and oxygen to live!. So no water = no bacteria, but I think there's more to it than that!. Vacuum packing gets rid of oxygen so that's effective!.
Chemicals - I guess the same!. Killing bacteria!.
