I'm thinking it's not a different temperature but a different moisture level you're experiencing!.
When you blow on a burn (with pursed lips), you're exhaling through a smaller opening, leaving time for the moisture in your exhalation to be absorbed or left in your mouth!.
When you open wide, the moisture doesn't disburse & ends up coming out with the exhalation!.
Also, when you're blowing on something hotter than your exhale, it (the exhale) will seem cooler!. When you exhale onto something cooler (glasses), it will seem hotter!.Www@Answer-Health@Com

This is kinda interesting!. It actually comes out the same temp, if you blow and put your hand right up to your lips, it is not cool!. But it feels hot when you open your mouth wide, because you are letting out so much more air!.Www@Answer-Health@Com
