Many people gag when they smell one certain food - for me it is the smell of steeped tea. Certain smells trigger a response from the brain that initiates the gag reflex. Sometimes is it because you got sick and threw up as a child after having that food - that's my reason. I have been able to overcome it by exposing myself gradually to the smell. I still cannot drink tea though, and the incident that caused my aversion happened more than 50 years ago.
Try to expose yourself to the smell for a few seconds a day at first, and then gradually increase the time and the proximity. Try sucking on lemon drops or peppermint while smelling the peanut butter. Apply a pleasing scent to your wrist so that you can smell that while the peanut butter smell is there. Try chewing on sugar free gum. As a last resort in your classes use swimmers nose plugs.
