does the consumption of too much salt cause a person to be overly emotional? has there been any research on this?

A very interesting question that you pose.
By "salt" I take it that you refer to table salt or sodium chloride( chemically and physiologically, there are many substances referred to as "salts")
Do to each persons individual chemistry and state of salt/water balance, I think that it would be difficult to make generalizations.
"Salt" and fluid balance is a very complex endocrine(hormonal) and physical process) referred to as "fluid and electrolyte balance": In normal healthy individuals, without medications, the body and kidneys adjust to a wide range of salt and fluid intake, without notable effects. Abnormal states are a completely different story. Medication, illness, pregnancy, kidney disease, neurological lesions and a number of other factors all influence this balance.
There is one very interesting component here though: Lithium(a salt) has long been used to treat "bipolar disease"(manic-depression). This disorder is characterized by alternate periods of depression and hyperactivity(mania). During WWII, it was used, experimentally, in the Pacific theater, as a "salt substitute" and we have come to find that Lithium can be very toxic, at too high of a "therapeutic dose".
Part of this cause is that Lithium displaces Sodium( Na+) in the normal electrolyte balance(part of table salt).
I am not aware of any other research with your referece: In great likelyhood, this is due to the fact of wide individual differences and that people with uncorrected "salt"/fluid balances become very ill, even life threatening.
