What is the best method of making sure fish is perfectly cooked?

Ive always had the hardest time pan frying fish.......It seems like you have to be very exact with fish, unlike steak or chicken where you can miss by a few minutes......It seems like if you leave it on for a second too long, it gets rubbery, and a second too short, it doesnt get done enough


Answers:

this is something you learn with experiance. when your fish hits the pan, the oil or butter should be hot, not burrning. the bottom is cooking first, of course, and you will see it turrning white. when it turns white a little past half way, flip it. a little less time than that took and you are done!
