all these other answers are essentially correct but I would like to clear up a misconception too many people have. most people, if they eat out, are likely to blame the last place they ate if they get sick. This isnt always true. If you eat at 7pm in a restaurant and vomit at 8pm it doesnt mean the food you ate at 7 was contaminated. Nearly all foodborne illnesses take up to 12 hours to develop enough for the victim to show symptoms. So it may not be dinner that made you sick, it might have been lunch or maybe breakfast. Here is a good rule of thumb. If its supposed to be cold then it it cold.If its supposed to be hot, then eat it hot. If you dont see steam coming off that buffet then dont eat it.and even thats not a guarantee of saftey. Remember 40 degrrees -140 degrees.
cold food has to be kept at a minimum 40 degrees and hot food has to reach an internal temp of 140 dregrees. higher temps for various meats. Bacteria can cultivate and reach toxic levels in as little as 4 hours. so refridgerate leftovers immediately and please stop thawing meat at room temp.
did you know that most people who get foodborne illnesses do not get it at restaurants. They get it from home or picnics.
did you know botulism can thrive in a baked potato? when you go to refridgerate something the object is to get it to 40 degrees as soon as possible. I place my leftovers in the freezer for 30 min to get the temp down.
