Swallowing past the throat is done with a process called "peristalsis". Peristalsis is the rhythmic contraction of smooth muscles to propel contents through the digestive tract.
The throat and esophagus use peristalsis to move food down into the stomach in wave forms. Peristaltic movement is initiated by circular smooth muscles contracting behind the chewed material to prevent backflow, followed by a contraction of longitudinal smooth muscles which pushes the digested food forward.
In short, after your food is chewed in your mouth, your throat and esophagus contract and relax in a wave form, which moves the food through your esophagus into the stomach.
