Damage to the occipital region of the brain (the very back of your head, where the primary visual sensory area is located) would do the trick, or any damage to the optic nerves. Of course any direct damage to the eye itself could too.

depends on whether, said eyes, are cut from your head.. or indeed.... you are beheaded!!! But a detached retina is more likely.... and this can be fixed very easily.... within 35 years if you are on the NHS waiting list!!
