The part of the bone you would be interested in understanding is the Haversian system. It's sort of like little tubes, holes I suppose, in the bones. They allow the bone to distribute stress throughout the bone, rather than concentrating it on one spot. While you might be able to bend one straw by pressing down on it, if you imagine a fistfull of straws all bound together, you discover it's much harder to crush them. They work a lot in the same manner a keystone in the top of a bridge arch works, by redistributing stress. Try a search using haversian system and that should bring you up plenty of info explaining how it all works. Pretty neat to think that it's the holes in the bones that make them strong.
