In general: low impact swimming/aquatic sports!. Elliptical machines work too!.

Depends what sort of knee injury!.
I had a knee reconstruction and the type of exercise i did was a few minutes on an exercise bike and slowly build that up, also those rowing machines they have at a gym!.
My physio gave me lots of exercises to do, if u havent seen one you should and they can help!.
swimming is really good and helps get the movement back into your leg!.
you dont want to push your knee to far though because it can cause more damage!.

You can purchase an arm bike for as low as $25 (Walmart web site)!. It sits on a table so can pedal with your arms instead of your legs!. You should be able to get your heart rate up without using your knees or legs!. Lifting heavier weights with your arms can also get your heart rate up but with a knee injury I don't recommend it!. Just asking for trouble!.
