Throat & Mouth Problems, Hurts like no other.?!

Question: Throat & Mouth Problems, Hurts like no other.?
Back story:
I'm a teenager and have been snoring for 3 years. The first two it was every few nights but this year it's been every night, as loud as an adult, and when my mom comes upstairs to wake me (alarms don't), she says it's so bad she has to practically shake and throw me around.

A year ago when the snoring wasn't that bad my mom took me to take a sleep apnea test to find out if I have it. But in a year my snoring has gotten so much worse, keep that in mind.

A week ago I went back (one whole year later, I know, we were busy though) to get the results. They came back fine, but that was probably because I barely snored back then and might not have the night of the test. If I went back, I'm sure their charts would be flying up and down and such.

The throat, nose & allergy doctor I saw a week ago said that my tonsils are kissing (together) and that my adenoids are 80% swollen and blocking one of my ear's Eustachian tubes. They said they really want to remove them but health insurance might not cover it because according to last years results when I barely snored (and now I do, really bad, worse than some adults), I don't have sleep apnea and don't need them out.

They also said a reason was because I don't get chronic sore throats. I do though, my mom just never takes me to the doctor because she's a nurse and thinks it is no big deal. Right now, I've had a sore throat since last week and it's only getting worse and worse. When I swallow I can feel me tugging at my uvula up top (which is also swollen) and it hurts throughout the whole upper-upper mid throat. I barely eat anything at lunch anymore because of the pain and my parents refuse to get the surgery because they're scared doctor's won't do it or won't give them the health insurance.
This has had a horrible effect on my health, every night these past 6 months I've felt like I've slept 1 hour than the actual 8 I might have slept.

I don't know what to do?

Also my tongue is yellow for some reason, could be nothing though.
