It could be a range of things, the most likely is Tonsilitus, look in a mirror, push your tongue down and shine a torch to the back of your throat, if there are little white spots at the back of the throat then it is Tonsilitus,

if not then it is probably laryngitis, the most likely cause of this is acid reflux, try taming down the spicy and oily foods for a few days, it could be bacterial and a doctor can prescribe antibiotics if necessary (most likely Amoxycillin).

Usual disclaimer,
if symptoms persist for more than a week go to the doctor's

Your neck muscles are more than likely tight for when they are tight they can put enough pressure into your throat to make it feel very sore because the muscles can't move with that pressure on them. To get rid of the sore throat you have to free up your neck muscles and here's how to do that:
Neck
Put your hands alongside your head so your thumbs are on the front of the muscle under your ear and your fingers are on the back of the muscle behind your neck. Squeeze your thumb and fingers together and hold. Relax your body. When your fingers and thumb touch, about two minutes, slowly lower your head as far as you can, release the pressure but hold your neck lowered for another 30 seconds.
For best results relax your body first by taking a deep breath and exhaling then remain this relaxed.

This has happened to me before, usually it happens if you have a fan pointed at your face at night, or if you have a really cold room, and you sleep with your mouth open. Try putting the covers over your mouth before you sleep to prevent, this might help.

Self-experience

The only one who can tell if you need your tonsils out is your doctor.

it sounds like your tonsils might need to be removed
