Also, I want to find a blind/deaf summer camp type thing within 100 miles of Las Vegas, NV. They would have to be able to let a 14 year old help/volunteer. Can you help me with this?

It truly depends on the severity of the blindness. My brother is blind and he is light perceptive. Basically, he sees white but can defer the differences between light and shadows. Others can differ from this depending on the severity of their blindness and reasons for them being blind.
As far as your camp searching goes, just use a Google search. Usually, it brings up a bunch of summer camp search engines where you can specify exactly what you're looking for.

A totally blind person sees exactly what you see out of your elbow. Legally blind people may still have some vision, but severe deficits, such as inability to focus, tunnel vision, or central blindness, depending on their condition.
Now, if you're asking what visual content a person might remember who has gone blind, that depends on the age at which they went blind. If they were blind from birth, they will have no visual memories or function whatsoever. If it happened when they were very young, they may retain some memory of color or motion. If it happened when they were an adult, they may have full visual memories.
