Because depth perception is important.

1. Having one eye would severely screw up your visual field--not to mention it looks as freaky as all get out. You wouldn't have periphery vision because the eye would be in the center of your face and you wouldn't be able to look left and right as easily.

2. Having three eyes would be silly.

3. You can get four eyes--if you get glasses.

4. Six to Eight eyes is just plain ridiculous.

Two eyes, in the end, is better for our composition because we have two arms, two legs, two ears, and we need two eyes to balance things out.

...Not to mention that Futurama is a television show.

Having two eyes allow us to have depth perception and thus fathom 3 dimensional world. This is very important since having only one eye will make you see everything only in 2D; just like when you see a picture - it will be very difficult to tell the relative distance of objects.

The question should be, what would it be like if we saw with three eyes instead of two?

I personally believe that the first creatures with 2 eyes survived better as they were able to see better and more realistically, and so natural selection took place.

God created adam and eve like that, so when they reproduced they got us all with two eyes.
