You should ovulate once every cycle... approximately 2 weeks after the start of your last period and 2 weeks before your next one is due. It may not happen exactly at that time... especially if your period is irregular, but it is just once per cycle. This is true no matter how old you are.
It just depends on your cycle... but you only ovulate once per cycle. On rare occasions you may release more than one egg at that time (this is how fraternal twins are made).
It is important to use birth control every time you have sex, as you can get pregnant at any time in your cycle... not just when you ovulate.
One egg per month is the usual thing, but sometimes it happens more than once. I don't think age has much to do with it, though.
