Your hymen is a bit of skin with blood supply. It partially covers the opening to the vagina making it smaller. When somthing big enough is pushed through that opening the hymen stretches a bit and then tears. It bleeds like any other bit of torn skin.
Popping someone's cherry is also just a way of saying that you were the first person that they had sex with, it doesn't actually have to involve tearing the hymen at all.
