What to cook for my friend who's allergic to flour?!


Question: one of my school friends is allergic to wheat/flour. We're not close yet, we met on campus few months ago. However, for the last few days she's been sick and hospitalized here and alone. I know she told me once she doesn't eat bread and cookies (b/c of flour). I want to make her some soup and I was wondering what might be a healthy/good alternatice to bake as dessert. Any tips? Hi. I would assume she has Celiac Disease and just didnt want to go into the details of it.
So Rice Krispies are out bc they have gluten in them.

Progresso chicken and rice soup is GF. You could also make her a chicken soup from any homemade chicken soup recipes but you would need to go to a health food type store and buy RICE or CORN noodles to use in the soup. Dont use any flour for the base of the soup. Regular chicken broth is Gluten free (GF).

You could make fudge (using only things like choc chips, condensed milk, vanilla. I have a good recipe if u want it) or pick up some valentines day candy (read the box to assure it doesnt contain wheat.)

If u have a store like Whole Foods, Wild Oats or a health food store u can probably pick up a "Pamela's Products Chocolate Chip Cookie Mix" or her "Luscious Chocolate Cake Mix" and both are Gltuen free and yummy. Just be sure if u use any frosting they dont contain wheat. (Read all labels, but I use pillsbury cream cheese frosting or some of the chocolates are gluten free.)

if I were hospitalized i would prefer that you ask me what I'd like. No matter how close you are, just ask her. You'll be closer friends for the gesture, and she might be craving something other than a dessert.

She has celiac disease -- cannot tolerate gluten. Do a little research and look up what she can and cannot eat- - there are diets and suggestions out there.

I would serve meat/fish/chicken and fresh veggies. Nothing processed - a lot of time, processed foods have added gluten which is the substance in wheat/flour that she cannot tolerate. Soup might be a little dicy -- you would really have to read the label; no noodles too.

For dessert - fresh fruit with freshly whipped cream. Or there are some gluten free dessserts you can make.

When your friend says she's allergic to flour, is it the gluten that she's allergic to? Flours such as wheat contain gluten, which can cause allergy to some people. If that's the case, there are other types of flour that either have little or no gluten. Rice flour, for example, does not have it. If you go to your local store, they usually give the warning label that the flour contains gluten or without gluten, so that will help you to decide which kind of flour to make.

If you don't want to use flour, there are certain recipes that call for no flour. I don't remember the name but if you search under epicurious.com or other recipe websites and type under "no flour dessert," you will find recipes that do not require flour. I recall some chocolate recipes that only asks you to whip egg and add in sugar, vanilla extract, and cocoa powder and you'll get your yummy cake. Some health food stores like Whole Foods Market offer almond flour and other bean flour so you can substitute regular flour. They also have other flour-less desserts that you can buy. Just ask the store manager or a nearby clerk for additional assistance.

You can try baked or grilled fruit. You can also try a fruit crisp, only using oatmeal and sugar instead of wheat. You can make a pudding or custard as well. You can make individual cheesecake cups in ramicans, and instead of putting any graham cracker crust on the bottom, just make the custard part.

You can't go wrong with berries & whipped cream. Ah yes, and there's ice cream, who wouldn't like that?
