Protien slows down the digestion of the carbs, so that they don't all get dumped into your bloodstream at once, causing a rapid and high rise in blood sugar.
The protien makes the blood sugar rise more slowly, more evenly and also helps prevent lows, because the rise lasts a little longer. This helps prevent hunger and lows between meals and at night.
Nuts or nut butter will also work with complex carbs.
I had gestational diabetes when I was pregnant and so was on a diabetic diet. The way it was explained to me is that the protein helps the body process the carbs in a better way. You still don't want to overdo the carbs....
Obviously that is probably a simplistic answer...but it worked for me!
Protein is good for your blood sugar because it has a more lasting effect on you. Just using plain sugar will rise your blood sugar but not for as long of a time. That is why cheese and crackers/ peanut butter/ etc are used more often to rise blood sugar then just sucking honey packets which is a quick fix but should be used very careful by the way!
The protein will help process the carbohydrates in a better way so that you can have a longer more stable effect on your blood sugar.
