Answers:

The ideal solution is to see a dietician, but since I don't know if your insurance will cover one for you, I will tell you what my practices are that I have recieved from my dietician. But these are just general guidelines.

Remember, every diabetic is different in as far as how many calories they should consume eat day to maintain or lessen(but not increase) their body weight.

I am 5'3" and 118 lbs., so your needs may be lower or higher than mine to maintain healthy weight:

High sugar vegetables include corn, sweet potatoes, peas.
As far as the other high-sugar vegetables (and the above is not an exhaustive list - there are more) , usually 1/2 ro 1/3 cup is appropriate per serving. A lot of times it's not only the type of food we eat, but an extravagant amount per serving that gets diabetics into trouble.

Rice (especially white) is often included in some diabetic meal plans. However, I stay away from rice altogether, because it spikes the blood sugar wildly.
But, it goes to reason that you can have a few more fresh cooked green beans than you can of corn.

Marbled beef contains a lot of fat so avoid it. Meats are mostly protein, not starchy, and any dietician will tell you a correct "portion" is the size of a pack of cards. No meats are off limits, (skinned chicken, veal, pork, lean beef)except don't make a habit of lamb, because it is also a very fatty meat. And stay away from sausages, because they often have added sugar. For any processed meat, you will have to read the package to find out if there is added sugar.

The reason I'm mentioning fat content also is because heart disease is the #1 killer of diabetics, so stay away from fatty meats and try to prepare them yourself with spices instead of gravies. (When I do buy ground beef, I get the 93 percent lean type and cook it to death until juices run clear & then discard any grease) .

I buy Burger King garden salad often, and prepare an oil and vinegar dressing instead of putting on the dressing that comes with it. I usually eat this in the evening. Or cut up a fresh green pepper or munch on fresh radishes.

Pretty much any other vegetable can be worked into a diabetic meal. Broccoli contains a lot of vitamin K (which is used in the process of clotting blood), so if you are older or on blood thinners, it's a no-no. And fish is great for you (no carbs, just protein!) if you like it. I can only stomach fresh broiled Salmon and Cod. But it's been "prescribed", so I do prepare it weekly.

Since your leg hurts, it could be neuropathy, but DEFINITELY get it checked by a doctor. It could be a more serious circulatory problem. You don't want to "guess" about what might be happening when you have diabetes.
